Quickbooks Resources & Advice

Our organization has been using QuickBooks Online (through a grant of course) for our book keeping for a little over a year now, and although I am not an accountant I have been managing it fairly well thus far. But, there are some aspects that I know I could be taking advantage of but just can't figure out how to go about it. There are also aspects that I could just plain do better at, but don't really know how to go about it. Many of the typical YouTube searches return plenty of resources, but they are sometimes hard to transfer to the rescue/shelter world. Or at least, for me anyway.

For example, QB has a "Projects" feature. On the surface, it looks like it would be great to track profitability (or lack there of) when working large cases of dogs or even holding general fundraisers, etc. But for some reason it seems the only way to add income to a project is by sending an invoice or generating a receipt for a product or service. If I assign a PayPal Transfer from a donation to that project, it doesn't show up as income on that project.

SO! I was wondering if others would be willing to share neat ways their organizations are using QuickBooks to serve their rescue or shelter. Or if they know of any outlets of information/learning that they use currently or in the past to help them with using QB and just general book keeping.

Here's my tip that I setup for us:
I have a folder on my PC that syncs with our organizations Google Drive (Workspace) where I can scan receipts into. That folder structure is, Financials->Receipts->{Year}->{Month}. Then when my sister, who is our Treasurer, gets ready to reconcile our accounts she knows where all the receipts are and can easily attach them to each transaction. When we were using MS365, I even used Power Automate combined with Teams and OneDrive for some nice automations, but I digress.
