Animal Welfare Professionals

I have just volunteered to serve as a shelter educator and to visit schools and other organizations.  Any advice on how to do this would be welcome.  Are there suggested books to read to classes, other classroom activities?  Do you worry about allergies if taking an animal?  Please and thank you for any help.
