Here's my document on dividers for volunteers who are overnighting a feral cat in a trap for the first time!

Exactly what Emmy said - transferring cats and giving/taking food and water bowls - along with a few other situations.
If you get 2 cats in 1 trap, most vets won't take them that way, so you need to move one of them to another trap. A trap divider can keep one contained while opening the door for the second (and you might need another divider to encourage them to move!).
If you use a drop trap, you use the divider to help get the right cat into the transfer cage or trap.
And if you need to give a feral cat an injection as well (such as for anesthesia for their spay/neuter), a divider can help keep them still for that as well.

Trap dividers allow you to transfer cats from trap to transfer cage or to contain a cat in a trap to change soiled paper, food, water. Here is a demonstration of using a trap divider to transfer.

What would the deviders be used for in this situation? I am not too familiar with all the best practices in TNR so I am curious.

One of my biggest pieces of advice is simply that if you can prep/set a trap by your vehicle/house, etc, and then carry it while set all the way to where you want to place it, you need to check your work and reset it! The trap should be sensitive enough that they 'go off' when jostled while carrying it. You can do all the prep at your home base, but setting the trap needs to happen after it's placed for the cats.
Also - it is 100% worthwhile to purchase trap forks (AKA trap dividers). I think my volunteers - even 'veteran' trappers - have been most impressed by the trap forks.
