Hi Stacey,
We have a farm animal rescue in Phoenix. We have large groups come quite a bit. I would say the biggest thing is writing out some tasks that you would love to get done but doesn't make the priority list when there are less volunteers. Break it into small groups with one senior volunteer leading, allowing for about 30 -45 minutes to complete. In our experience. that time frame is most effective and keeps the volunteers engaged. Then, we all meet back up for a water break, talk about what everyone accomplished, and spend time with the animals. I hope any of this helps.
