I have listed my org's options in PetPoint at the bottom of this message. We sometimes customize our options, so this may not be PetPoint's standard array. Naturally, you should remove some of these options based on the species you'll care for. If you're going to have fancy breeds then you might want to add more of the fancy color names.
If you'd like to use color data for analysis, then I'd emphasize some sort of training to define colors and when to use them. If this is only to help people find animals to adopt or confirm that a record matches an animal, I think it's less important. Years ago, I had a coworker tell me that a patron described a dog as white, tan, and brown and she entered it into the system because of course brown and tan are the same thing....
